Last-Minute Thanksgiving Recipes (and Inspiration!)

It’s the Tuesday before Thanksgiving and, wait – what? You don’t know what you’re making yet?

Preheat your oven and change the batteries in your smoke alarm because members of our Slack #cooking channel are sharing a sneak peek at their Thanksgiving spreads.

Take a look and let the inspiration (and hunger) begin.

Breakfast casserole

“Every Thanksgiving (and Christmas too) I make this broccoli, mushroom, and cheese strata for breakfast. I love it because I can make it the night before then throw it in the oven the next day without having to worry about more dishes to clean up while I'm trying to get everything prepped for dinner.” - Amelia V.

Green beans, rolls, and more!

thanksgiving rolls

“I make bread and green beans. I usually make rolls because they're easy to grab, which is popular with crowds and children. The beans are an ancient Doyle family recipe and like all good family recipes, amounts are sort of a loose guideline. Here's the end result with my wife's cranberries and some turkey from last year. Thanksgiving is a big deal in the Doyle household.” - Nate D.

Cornbread stuffing

“I don’t even remember how I stumbled upon this recipe for a non-traditional cornbread and andouille sausage stuffing but it’s insanely good. I make the cast-iron skillet cornbread the day before so that it has time to dry out, and as a bonus the dish only needs minimal oven time on the big day. There’s something about the sausage-cranberry-apple’s always a huge hit!” - Becca T.

Potato casserole

“My partner and I will be making this potato casserole. I would not recommend making this for only two people like we did the first time because it's so good you will end up eating it all (unless you are okay with eating 2.5 lbs of potatoes per person, I'm not here to judge). We ate it for like eight meals and were barely tired of it, but it was a lot of potatoes. We have also made these cheesy mashed potatoes before for Thanksgiving. It leaves a VERY messy pot, but never any leftovers.” - Michael V.

Deep-fried oil-less turkey

“Deep-fried (oil-less) turkey is the way to go. It's safer and cheaper than deep frying with oil. I currently use this one.” - Kevin E.

Fancy apple pie

“I make a fancy apple pie every year and have made this one several times.” - Stephanie L.

The gluten-free/dairy-free Thanksgiving edition

gluten-free thanksgiving meal

“Last year, [we] made a completely gluten-free and nearly dairy-free Thanksgiving FEAST. It was honestly hard to tell most of it was gluten-free. I also made a gluten-free apple pie. No groundbreaking recipes to share here, but a gluten-free/dairy-free Thanksgiving feast can be done.” - Joel W.
